1. Creamy Mushroom Soup
I can’t tell you how much I love this soup, and it takes only 20-25 minutes to get ready. I often make it when guests visit as this delicious soup is a warm and hearty winter meal that makes my guests happy. Let’s see what you need to make it.
· 2 tablespoons vegan butter
· 1 small chopped onion
· 16 0z mushrooms sliced
· 3 to 4 cloves garlic
· ¼ gluten free flour, otherwise regular flour
· 1 teaspoon thyme leaves
· ½ teaspoon salt
· 1 ½ cups coconut milk
· 1/2 teaspoon black pepper
In a large pot put the butter and let it melt. Then add onions and mushrooms along with garlic and let the all ingredients sauté for few minutes. When the mushrooms are softened add the flour and cook it for a minute. Now add 4 cups of water, coconut milk, salt, black pepper and thyme leaves. Use your spoon to mix all things well and scrap the bottom. Bring it all to a boil on a low to medium heat, and let it simmer for 15 to 20 minutes. When it thickens remove from the stove and serve it hot to your guests. This is among the best of all winter vegan soups.
2. Healthy Broccoli Soup
There are many vegan soups out there with broccoli. This fast-to-make, delicious and healthy weekend meal is loaded with nutrients, and is something that no one can resist. It is super easy to make and you need only a few ingredients to make it. Preparation time is 30 minutes. It is pure vegan soup but with a creamy look and delicious taste. Doesn’t that sound great? · 2 tablespoons olive oil
· 1 chopped onion
· 3 to 4 cloves garlic, minced
· 1 to 2 poblano peppers
· 7 cups broccoli cut into bite size
· 4 to 5 cups veggie broth (4 cups water+ 1 tablespoon vegetable stock)
· ½ teaspoons salt to taste
· ½ teaspoon black pepper
· 1 teaspoon dried oregano
In a pot, add olive oil, onions, garlic and poblano peppers and stir for 5 minutes. Now add the broccoli, veggie broth, water, oregano, black pepper and salt. Cover it and bring it to a boil. Cook on low flame until the broccoli is tender. Now with the help of a hand mixer, mix the ingredients well until it gets a smooth soupy look. Turn the heat down and let it cool. Be careful not to cook too long because this will waste the nutrition value of the soup. Now serve it in soup bowls and enjoy!
3. Vegan Butternut Squash Soup

Yes, the delicious and mouth-watering vegan butternut squash soup is a delight for many. For a soup that’s comforting, warm and reminiscent of a family-favorite while growing up, this is perfect choice for you to serve. Cooking time is almost an hour. Let’s see what ingredients we need to make it!
· 6 cups of butternut squash peeled and chopped
· One tablespoon olive oil
· One medium onion chopped
· 2 to 3 crushed garlic cloves
· ½ teaspoon dried basil
· ½ teaspoon dried thyme
· Salt according to your taste
· 1 teaspoon black pepper
· 4 to 5 cups vegetable stock
· One cup coconut milk
· 1 tablespoon soya sauce
Preheat the oven to 400°F (or 204 degrees Celsius).
Now in a bowl, add the peeled and chopped butternut squash, dried thyme, olive oil, dried basil, salt and black pepper and toss all well until the spices coat all of the butternut squash. Then transfer the butternut squash to a baking tray and space the pieces evenly.
Bake for 30 minutes. Then, in a large pot add some olive oil, chopped onions, garlic, salt and pepper, and cook until the onions are softened. Then add the roasted butternut squash in it and stir well.
Add the vegetable stock and soya sauce, and cook on a low to medium heat for 15 to 20 minutes. Then take it off the heat, and with the hand mixer mix the soup well to give it a smooth, creamy look. Now at this stage add the coconut milk and mix well. Pour the soup in the bowls and serve.
4. Golden Lentil Barley Soup

Winter vegan soups need to be hearty and feel heavy to bring comfort our cold bodies! This soup is house favorite because it is not only quick and easy to make but also has many health benefits. It is a perfect dish that helps shed some pounds while experiencing a vegan delight as dinner. It is very soothing and full of nutrients. After my pregnancy, I lost many pounds only having this warm barley lentil soup for few days. Believe me, you’re also going to love it.
· 1 tablespoon olive or coconut oil
· 1 onion chopped
· 4 to 5 minced garlic gloves
· 1-inch fresh turmeric root
· 2 carrots optional
· 4 cups vegetable broth
· 2/3 cup red lentils rinsed
· ½ cup instant barley
· Salt and black pepper to taste
Heat the oil in the pot and add the onions and garlic, and sauté for a minute or two. Now add turmeric, salt and pepper and stir for a minute. Then, it’s time to add the broth and get it boiling. Add the lentils and cook it for 10 minute or until tender. Add the barley, and cook it on low flame for 20 minutes. Let it mix thoroughly. It’s done now so serve it hot, and enjoy the feeling it will give your body as it warms it up during the cold weather. This is definitely one of my favorite of all vegan soups!
5. Kale Butter Bean Soup
I know you must be thinking I have gone mad, green kale soup? Believe me you are just going to fall in love with it. It's actually one of the very best vegan soup recipes.
· 1 tablespoon coconut or olive oil
· 1 medium onion chopped
· 2 to 3 cloves of garlic
· 2 cups red potatoes cut into cubes
· 4 cups vegetable broth
· 1 teaspoon salt
· 1 tea spoon black pepper
· 2 ½ cups cooked butter beans (also known as lima beans)
· 3 cups kale
In a pot heat the oil and add the onions and garlic and sauté it. Now pour the vegetable broth, potatoes, pepper, and salt and give it a stir. Cook on low to medium heat for 15 to 20 minutes until potatoes are softened. Now add the cooked butter beans and the kale, stir continuously to combine all ingredients well. You can also use the hand blender or mixer to give a smooth, creamy look to your soup - I prefer using the hand mixer. Serve it hot to get the true aroma.
